Honey-Dijon Glazed Salmon
I love salmon but sometimes get tired of eating it "plain" (baked with salt and pepper.) Here is an easy and healthy way to liven up your salmon. The glaze/sauce is dual-purpose! Use the remainder of the same exact sauce to drizzle on your vegetable side dishes.
Maple-mustard salmon with Red Quinoa and Brussels sprouts
For the salmon glaze, combine:
- 2 tbsp. honey
- 2tbsp. lemon juice
- 2 tbsp Dijon mustard
- 1 tbsp. grated lemon zest
This amount of glaze is enough to coat 1 lb of salmon (2 dinner-size pieces) and also enough will be leftover to use for the veggies. I served it with steamed Brussels sprouts and quinoa, but the sides are really up to you. Any combo of vegetables (green beans, broccoli, cauliflower) and a grain (any type of quinoa) or carb (brown rice, cous cous, roasted sweet potato) would work nicely here.
